Peruvian food? In Connecticut? The summer edition of Edible CT East magazine has a great description written by Kristin Wolfe, about Cora Cora Restaurant, which serves Peruvian cuisine near Hartford, CT. It was great to photograph for this article, as well as learning about the ingredients that make Peruvian food special. 

Lomo Saltado, is the best beef tenderloin dish I think I've ever had. So tender, and the Aji Amarillo peppers (a Peruvian hot pepper), adds flavorful kick. This dish reminds me of a pot roast, because it's great poured over potatoes or rice.
Believe it or not, Cora Cora is in a building that used to be a McDonald's! It's in a great location, close off of the I-84, and near some great breweries and cafes in West Hartford.
Two sisters, Grecia and Macarena, now run Cora Cora Restaurant. Started by their parents, they continue to provide traditional Peruvian cuisine to food lovers from all over. Chef Macarena was nominated for the James Beard Award, and was finalist & semifinalist for Outstanding Restaurant and Best Chef of New England.

The empanadas at Cora Cora Restaurant were incredible. They're freshly made by hand right in the kitchen. You can get beef, chicken, and a sweet dessert type empanada made with guava and cheese.
Cora Cora is also known for their rotisserie chicken. They use organic chicken, and it's marinated in a secret blend of spices. It's one of their top sellers. Customers often pre-order it to pick up through their drive-thru window!
