Creamy, Peruvian Hot Sauce with Aji Amarillo
In this editorial photo shoot for Coracora Restaurant in West Hartford, CT, I was introduced to their incredible spicy house sauce that I had never heard of!
You know how satisfying it is to eat sweet potato fries with creamy sriracha mayo? Sriracha mayonnaise complements certain foods that you just can’t refuse it. A must-have in my household! But introducing the Aji Amarillo Sauce…where has this been all my life?
Fans of this West Hartford, CT restaurant call it “Cora Sauce”. Or maybe you can call it their secret sauce. Very similar to Sriracha Mayo, the Cora Sauce is a traditional Peruvian sauce used with meats, seafood, and pretty much anything.
If you like a thick, fresh ranch that’s for veggie dipping, imagine this but with the flair and spice of a hot yellow pepper. I’m not sure what else they put in this to make it so good, but this Cora Sauce is amazing with crispy hot yucca fries and roasted chicken.
I’m not a spicy food lover, but I love a touch of a kick, especially when I’m already eating great tasting food! The Cora Sauce is that perfect addition to add extra kick when experiencing authentic Peruvian cuisine.
At Coracora Restaurant, they make this sauce from scratch using frozen aji amarillo peppers. You can’t use any other kind of pepper, the flavor isn’t the same. Maybe because the aji amarillo pepper is kind of fruity and mild in spice. You can buy jars of their sauce to take home, too. Put it on anything. Your Tuesday night taco order, or leftover chicken, potatoes, or even on a salad.
